Pray for Miracles, but Plant Cabbage
We always have a head of cabbage in our house. Cabbage is so versatile and very inexpensive. We use cabbage in slaws to go with tacos and BBQ. It is great sautéed and especially delicious in pasta with sausage and cheese. There are many different types of cabbage like green, red, savoy and Napa. I like red cabbage for this recipe as it lends a nice sweetness, but holds its texture a little more than other varieties of cabbage.
Some type of cabbage grows in over 150 countries around the world. Most people think of places like Russia and Eastern Europe when they think of recipes made with cabbage. I’m sure Italy doesn’t immediately come to mind, but the northern part of the country uses cabbage regularly.
There is an old saying among farmers that goes “Pray for Miracles, but plant cabbage”. Cabbage is packed with nutrients and vitamins and is even thought to contain anti-inflammatory properties. This recipe is about cabbage as a side dish, but cabbage can be used in an endless number of applications and great entree’s can be made with cabbage as well.

According to Google, there are over 7,500 varieties of apples! Who knew there were so many? In this recipe, we used Granny Smith apples. They are a little tart and hold up well to cooking. You can use your favorite apple variety or whatever kind you happen to have in the house for this recipe.
