Red Cabbage with Apples is a one of my favorite side dishes. It is a simple side dish that is homey and comforting. It pairs well with Joe’s Seared Pork Chops. Pork, cabbage and apples are a classic combination.

The red cabbage and apples are sweet and the touch of apple cider vinegar adds a nice acidic note. This is a quick side dish to whip up so its perfect for a weeknight meal.

Pray for Miracles, but Plant Cabbage

We always have a head of cabbage in our house. Cabbage is so versatile and very inexpensive. We use cabbage in slaws to go with tacos and BBQ. It is great sautéed and especially delicious in pasta with sausage and cheese. There are many different types of cabbage like green, red, savoy and Napa. I like red cabbage for this recipe as it lends a nice sweetness, but holds its texture a little more than other varieties of cabbage.

Some type of cabbage grows in over 150 countries around the world. Most people think of places like Russia and Eastern Europe when they think of recipes made with cabbage. I’m sure Italy doesn’t immediately come to mind, but the northern part of the country uses cabbage regularly.

There is an old saying among farmers that goes “Pray for Miracles, but plant cabbage”. Cabbage is packed with nutrients and vitamins and is even thought to contain anti-inflammatory properties. This recipe is about cabbage as a side dish, but cabbage can be used in an endless number of applications and great entree’s can be made with cabbage as well.

According to Google, there are over 7,500 varieties of apples! Who knew there were so many? In this recipe, we used Granny Smith apples. They are a little tart and hold up well to cooking. You can use your favorite apple variety or whatever kind you happen to have in the house for this recipe.

One of the best things about Red Cabbage with Apples is that you probably already have all the ingredients in your home so putting together a tasty and healthy side dish is quick and easy!

Ingredients

  • 3 cups 3 red cabbage

  • 1 1 Granny Smith apple

  • 2 tbsp 2 olive oil

  • 3/4 cup 3/4 chicken stock

  • 2 tbsp 2 apple cider vinegar

  • 3/4 tsp 3/4 salt

  • 1/4 tsp 1/4 ground black pepper

Directions

  • Finely slice the red cabbage. Peel and cut the apple into 1 inch chunks.
  • Heat the olive oil in a large skillet on high heat. Once hot, add the red cabbage and season with 1/2 tsp salt. Let it cook down a little, about 3 minutes, stirring to keep it from burning.
  • Add the apple and cook for about 1 more minute.
  • Add the chicken stock, apple cider vinegar, 1/4 tsp salt and black pepper. Let simmer on medium low heat for about 7 minutes until most of the liquid is evaporated.
