Pork Tenderloin with Mustard Sauce

Pork Tenderloin with Mustard Sauce is a tasty and elegant meal that you can cook quickly for a nice dinner at home. This recipe is perfect for just two people, but is also a party pleaser. You can make it when you are entertaining a group of friends.

Pork tenderloin is quick and easy to cook. Just give it a good sear in the skillet on the stove top and finish it off in the oven for about 10-12 minutes. Since the pork tenderloin is so lean, I like to cook it to medium to keep it from drying out. Lastly, I top it with a delicious mushroom mustard sauce to make this a restaurant worthy meal.

While the pork tenderloin is resting, I make the mushroom mustard sauce in the same pan I cooked the pork in. (Just be careful as the pan was in the oven and is very hot.) I prefer to use a variety of mushrooms to make this sauce, like cremini or shitake. Any mushrooms that you like and are fresh will work nicely in this sauce.

I like to make the sauce with a combination of Dijon and whole grain mustard. The Dijon mustard has a smooth creaminess, while the whole grain mustard not only has a strong flavor, but the whole grains look beautiful in the sauce. To keep this dish on the lighter side, I use condensed milk (instead of heavy cream) to finish the sauce. The condensed milk still gives the sauce a creamy texture without all the extra calories.
