There’s nothing like fresh fruit at the height of their season! They not only taste delicious, but their aroma is heavenly (plus, they’re less expensive). That’s when I feel inspired. Sometimes just eating them on their own is the way to go, but other times I like to work them into our favorite recipes.
I make these strawberry shortcakes with my light and fluffy Southern Style Biscuits. These biscuits come together quickly, but you can make them a day or two in advance, if you like. Just be sure to wrap them well if you make the biscuits in advance. These biscuits are not sweet, but the strawberries and cream are. This creates a nice balance of flavors.

The Mascarpone Whipped Cream takes this dish to a new level! Mascarpone cheese if one of Joe’s favorite ingredients. We use it in savory dishes, like on a pizza or incorporated into a tomato sauce, as well as in sweet dishes.
Mascarpone cheese is ivory-colored, exceptionally smooth, and easily spreadable, similar to fresh cream cheese. The flavor is milky and slightly sweet, not tangy like cream cheese. Its rich, buttery texture comes from the high butterfat content. When added to whipped cream it creates extra sweetness and body. Joe likes to eat mascarpone whipped cream by the spoonful!

Of course, be sure to eat the strawberry shortcakes right after assembly so they don’t get soggy. This dish is pretty enough for company, yet easy enough for every day.
