Summer Berry Tiramisu

Light, creamy, fruity and delicious are four words that best describe Summer Berry Tiramisu. (I couldn’t stop at three words!) Traditional Tiramisu is a coffee flavored Italian dessert that’s made with ladyfingers dipped in coffee and layered with a mixture of mascarpone cheese, zabaglione and whipped cream and finished with a dusting of cocoa powder. The original recipe has morphed into many varieties of cakes and other desserts.

I lightened up this tiramisu by eliminating the coffee, zabaglione (which is made with eggs), and cocoa powder. Then I replaced the coffee with orange liqueur and added a few layers of strawberries and blueberries to help celebrate the summer season. I always like a nice red, white and blue dessert for a patriotic flair at our July 4th celebration. This dessert fits the bill. Plus, its an easy, make ahead, no bake dessert.

No bake desserts are the best! Who really wants to turn on the oven when its so hot outside? I really like make ahead desserts too. When our friends and family come over, I like to be able to socialize and have a good time with them. Not worry about making dessert!

Summer Berry Tiramisu the perfect Red, White and Blue Dessert!

My Summer Berry Tiramisu is the true definition of Italian American cuisine. A dish inspired by Italy, but made with the freshest ingredients found right here at home. Its so easy to make! I give the ladyfingers a quick dunk in an orange liqueur flavored simple syrup. Then just layer them with the sweetened mascarpone and whipped cream mixture, and the fresh summer berries. You’ll need to make this dessert a few hours before serving so the ladyfingers can soften into the cream. Lastly, I serve up with a nice shot of espresso.

My Summer Berry Tiramisu is so easy to make! Just layer ladyfingers with a sweetened mascarpone mixture, and fresh summer berries.

Ingredients

  • Berries
  • 2 cups 2 strawberries, sliced

  • 1 cup 1 blueberries

  • 1 tsp 1 orange zest

  • 1 tbsp 1 sugar

  • 2 tbsp 2 orange liqueur

  • Simple Syrup
  • 3/4 cup 3/4 water

  • 1/4 cup 1/4 sugar

  • 2 tbsp 2 orange liqueur

  • Mascarpone Mixture
  • 1 cup 1 mascarpone cheese, room temperature

  • 1 1/4 cup 1 1/4 heavy whipping cream

  • 2 tbsp 2 sugar

  • 1 tsp 1 vanilla extract

  • 1/4 tsp 1/4 salt

  • Lady Fingers
  • 1 package 1 ladyfingers

Directions

  • Toss the sliced strawberries and blueberries together with the orange zest, sugar and 2 tbsp orange liqueur in a medium bowl. Set aside.
  • Combine the water and sugar in a medium saucepan to make a simple syrup. Once the sugar had dissolved turn off the heat, and add 2 tbsp orange liqueur.
  • In a large bowl using a hand mixer or large stand mixer, beat the heavy whipping cream, sugar, vanilla, and salt until soft peaks form.
  • Add in the mascarpone cheese and continue to whip to stiff peaks.
  • Dip the ladyfingers in the simple syrup and place in an 8×8 pan to make the first layer. Don’t let them soak as they will fall apart, just a quick dip in the simple syrup is perfect.
  • Spread half of the mascarpone mixture on top of the first layer of ladyfingers then top with a layer of the berries. Repeat the process with the second layer of ladyfingers, mascarpone mixture, and berries.
  • Cover and refrigerate for about 2-4 hours. Store in the refrigerator for up to 1 day.
